I worked in 3 different retail stores. As the roles were identical how do I combine the roles into 1?

The idea is so prospective employees don’t just focus on my retail history but also look (and get impressed!) by my work experience in the relevant field for the jobs I’m applying for. Retail was just to help out when at uni. Thanks in advance for all your help!

List all three separately but in the description focus on the different things that you accomplished at the job. Don't talk about tasks but talk about actions and accomplishments. Like increased sales by 20%, organized a time saving stock checking procedure. Use things like this to show that you are more than a counter clerk. Give the items a slant (slant not lie) toward the postition you want.
