What are some jobs for (sense of) adventure?

Suppose you are in early 30s workin' in IT. You are college degreed. Want to take up to two years off from IT bulls. You are in good physical health and still sane.
What jobs are out there that can be physically rigorous and yet provide adventure and worthwhile life experience? Jobs that don't really demand years of relevan experience.
Considered Alaska Fishing Job (pays under $10/hr), working in Iraq (somehow this doesn't seem right), Merchant Marine (I can't take time and money to get trained at their academy)....
What other options can you suggest. Please provide company name and prefereably a web link that has application info. Thanks much.

Help people in places you would never help people. Give your self a job that would take true skills to see If you have the skills It take. Fly plans to places with adventure and less work, but pay good.... Remember that my friend

Sorry I don't have any company names, I'm just brainstorming some ideas for you, so enjoy.
You could travel from town to town, working odd jobs to get money and move on. The work would not be very meaningful, but the overall experience could be quite the adventure.
Go to New Orleans and work construction. They are still rehabbing houses that were flooded during Katrina.
Get certified to drive an 18-wheeler and become a trucker for a couple of years.
See what it takes to become a Private Investigator.
Run for public office just for the heck of it.
Go to California and audition for movie and TV roles.

I have opinion that what you need is vacation around the globe..
Or you can work in cruise ship, it's gonna be interesting. Since I see you into water
Do you think work in the kitchen would interest you? I have experienced to work in Hotel kitchen, since it's the largest kitchen beside restaurant, and the work is so much. I really like the atmosphere.
But if you like to stay away from people for a while I suggest be Archeologist assistance
